It’s fall and I’m all about the pumpkin spice but trying to be a conscious consumer; reducing my intake of processed foods and sugar has left a basic b* sized hole in my heart.
Since breakfast is my favorite meal of the day and I bought a new (adorable) mini waffle maker… here it is! The answer to my basic needs.
Ingredients
Dry:
- 1/2 cup (Bob’s Red Mill gluten free baking) Flour
- 1/4 tsp Baking Powder
- 1/4 tsp ‘Pumpkin Pie Spice’ (cinnamon, nutmeg, ginger, & cloves)
Combine
- Wet:
1/2 cup ‘Oatly’ oatmilk - 1 egg (beatenon low or whisked for 2 minutes)
- 1/4 cup organic pumpkin purée
- 1Tbsp Manuka honey
- 1/4 tsp of vanilla
Mix
Combine wet and dry ingredients
Cook in your favorite waffle press
Yields 4 mini waffles. I purchased the ‘Dash’ mini waffle maker from Target 🎯
Pumpkin spice glaze- 1 Tbsp Manuka honey, a dash of pumpkin pie spice, and 2 Tbsp of melted butter
